The ultra-luxury Rosewood Beijing, located in the capital’s central business district, is the first China property for Rosewood Hotels & Resorts. It is styled in tribute to Beijing’s heritage and features no less than six restaurants and lounges. The hotel is dedicated to offering its diners menus that are packed full of farm-to-table freshness and we caught up with Matias Martinez, the hotel’s Director of Culinary Operations to find out more about their food philosophy.

For Matias, “Farm to Table” is completely linked to the philosophy of Rosewood’s Partners in Provenance. Rosewood Beijing chefs partner with local farms and food producers in a commitment to showcasing locally grown, sustainable ingredients in fine cuisine.

“We are surrounded by great suppliers such as Shunyi Farm, Ronking Farm, Le fromager du Pekin and many more, meaning we have great, fresh local produce available. For us, it is the perfect opportunity to support the local community.”

“I am constantly surprised and delighted with the huge variety of food offerings and restaurant concepts around Beijing – there is so much to see and so many flavors to try.”

Matias is originally from Barcelona, Spain. He worked at top hotels and resorts in Spain, Mexico, the United States, Macau, the United Arab Emirates and the Bahamas before moving to Beijing.

“I am inspired by daily life in the capital and love to go to local markets, such as Sanyuanli in Chaoyang District. For me, going to markets and seeing and feeling the produce is the best way to get inspired!”

Matias has many favorite dishes on the menu and says it totally depends on which day you ask! Overall, he loves seafood dishes – probably because he was born and raised 100 meters from the Mediterranean Sea.


On SeptemBeshan Gai 2016 - A Celebration of Artisan Chinaber 23rd, Rosewood Beijing will be showcasing their Farm to Table menus at WildChina’s Beshan Gāi, a celebration of artisan China in the form of a pop-up bazaar.

Whet your appetite with colorful, organic Yunnan produce, enjoy a tipple or two of handcrafted Fujian rice wine and get a taste of the luxury hotel’s own farm to table philosophy with a specially prepared Beshan Gāi menu and after work drink specials. There will be hand-crafted goods for those with an appetite for fashion and homewares as well.

The whole experience will be a carefully curated feast for the senses – transporting visitors into the kitchens, rustic markets and workshops of China’s culinary artists.
